A central Italian variety. Bold fruit, macerated dark berry, blood plum and bakery spice.

The Sagrantino variety originated from Umbria in central Italy and it's not something we see around these parts every day. We employed our usual hands-off approach to allow the fruit to express itself in its own words - we're particularly gentle with the Sagrantino as we want to avoid too much extraction and maintain the vibrancy of the fruit. The fruit was very dark in colour with dense, rich, dark flavours and lot of tannins in the skins.

The wine followed this path of being on the dark side all the way through wild fermentation, before being pressed to French oak (about 10% new) to mature and go through wild malolactic fermentation. The resulting wine has a strong aroma of tropical flowers, dark berries, and aniseed spice, which all flow through to a palate of rich and dense flavours, lifted acid and firm tannins. It's dark without being heavy - the natural acid and lifted aromas keep things in balance.
