Classic Cabernet with cassis, tobacco, and vanilla spice interwoven over firm but smooth tannins.

We think Cabernet is due for a comeback in Australia - and we can't wait! For a variety that is typically very savoury and structured we were not sure how it would bend to the Noisy Ritual house style. We picked the fruit quite early, being careful to wait until the green characters were not too prominent, and treated it gently so as not to over-extract it.

Even still, the wine had a lot of green aromas, spicy, herbal flavours, and firm tannins when it was pressed. We realised that this wine demanded more new oak than NR wines typically have, so we matured it in 25% new french oak with the aim of balancing the firm structure and adding a little more generosity to the palate.

The results speak for themselves. We are very pleased to see that even at a young age this wine displays an abundance of varietal character but manages to be as approachable as we all love our NR wines to be.

It may need a little air to open up the fruit when it is first opened, but it's very enjoyable to drink now, and will certainly reward a little time in the cellar (or under the bed) too.
