Racy and vibrant Pet Nat. Apricot, tangerine and a hint of shortcrust pastry.

This is the wilder sibling of the still Viognier that we made from the same batch of juice. We love to be able to taste the still and Pet Nat versions of this Viognier together and see the influences of the winemaking techniques on the two wines. The main difference (apart from the fizz) is that the Pet Nat finishes fermentation in bottle and has a little yeast sediment influencing the flavours, whereas the still wine was aged in old barrels for 6 months and has a little bit of oak characteristic in the wine.

Aromas of apricot blossom (and a hint of apricot crumble on the palate) peek through the mineral acidity that makes this a very fresh and vibrant Pet Nat - the perfect aperitif.

FUN FACT: Pet Nat is short for Petillant Naturel and means naturally bubbly in French. After the yeast cells finish the fermentation they precipitate out of the liquid to form a fine sediment in the bottom of the bottle. You can either pour the clear wine without disturbing the sediment, or mix it up and enjoy the full rich experience. Choose your own adventure.
