One of the most noticeable influences in modern Australian grapegrowing is the acknowledgement of the climate that we are growing grapes in. In the early days of Australian viticulture everyone planted their favourite (usually cool-climate) French grape varieties wherever they wanted to grow a vineyard (often in very warm places). These days switched-on growers are looking further afield to find varieties that are more suited to the growing conditions. One of the best examples of this is Fiano, hailing from Campania in Southern Italy.

Fiano is now grown in many places around Australia that are relatively hot and dry and it is thriving. Since the vines evolved under these conditions they are very happy to grow in similar places and produce well-balanced fruit. This means that we now have many producers around Australia making a variety of styles of Fiano that are fresh and vibrant despite being grown under conditions that would turn cool-climate varieties to jam.

The Noisy Ritual Fiano is a little unusual, as it is cold soaked on skins for 5 days pre fermentation for maximum intensity. This maceration extracts plenty of colour, aroma, flavour, and texture from the skins into the juice, so that we end up with a wine that has the freshness and vibrancy of a typical Fiano, but with extra layers of unctuous complexity. It makes for the perfect accompaniment to cheese and charcuterie and a gentle breeze.
