2023 Sunbury Pinot Noir
A spicy, earthy, cool-climate Pinot. Dark cherry with hints of nutmeg and lavender.
We love Pinot Noir because of its boundless complexity and subtlety - It can be the kind of thing you can enjoy without thinking too much (say, lying on your back in the park) but you can also intellectualise it - spending hours watching it develop in the glass and pondering the meaning of life.
This fruit was hand picked and mostly destemmed (we kept 10% intact as whole bunches). The wild ferment was foot stomped then pumped over daily in open fermenters. It was then gently pressed and matured in french oak (15% new). The (pretty modest) new oak proportion enhances the tannins and adds a bit of spice, without dominating the fruit flavours.
The result is an earthy, savoury & complex Pinot Noir, best enjoyed with a fine meal and some highly intellectual banter (or the best you can muster).
Nose: Red & dark berries, floral notes, spice and earth
Palate: Red & dark fruit, spice, mushroom with firm tannins & bright acid
