Hand sorted and stomped before undergoing wild fermentation in open fermenters, where it is hand plunged daily. Hand pressed then matured in French oak barrels (20% new). Full wild malolactic fermentation.

Nose // Fruits of the forest with a hint of gun smoke

Palate // Dense, concentrated dark fruit with a long finish and fine tannins.
