Hand picked from Strathmore vineyard in the Moorabool valley. Made using the traditional French technique of Carbonic Maceration, which involves putting whole bunches of fruit into a sealed tank under a blanket of carbon dioxide. The fermentation begins inside the individual grapes, creating a greater complexity of flavour than regular fermentation.

LIfted aromas of dried herbs and dark cherries with a hint of charcuterie. On the palate it displays spice, sour cherry and earthy flavours, with slightly chewy tannins and a sharp and spicy finish.
